I love the idea of being able to spend time making myself look gorgeous all the time, but I’m not very good at it! I do believe, though, that what you eat has a significant impact on our bodies – what you put in is what you get out, basically.
Nutritionist Lola Berry is a specialist on this kind of thing though, and this recipe is designed specifically to be good for your hair. So if you’ve got split ends or your hair’s looking a bit dull, eat these. Do you need a better excuse?
These little treats are super good for your hair and tick all the paleo and vegan boxes. If you’d like to tailor them to make them fructose friendly, just replace the maple syrup with rice malt syrup. This recipe would also make an awesome body scrub – give it a try and your skin will be thanking you too!
Ready in 30 minutes (including freezing). Makes around 20 macaroons
- 1/2 (125ml) coconut oil, melted, plus extra if necessary
- 1/2 cup (55g) almond meal
- 3 tablespoons maple syrup, plus extra if necessary
- 1 cup (90g) desiccated coconut
- 1/2 teaspoon ground nutmeg
- 1 vanilla pod, split and seeds scraped (or 1/4 teaspoon vanilla powder or extract)
- pinch of salt flakes
Combine all the ingredients in a large bowl and mix together thoroughly, adding a little more coconut oil and another tablespoon of maple syrup if the mixture is too crumbly. Shape the mixture into little balls (it’s easier with damp hands), arrange them on a tray and whack them in the freezer for about 20 minutes to set. Store in an airtight container in the fridge for up to 2 weeks and share them with your mates.
