Have you noticed that the more interesting a breakfast cereal is, the more expensive it is – and usually, the higher in sugar it is? Me too! So – I decided to make my own. It’s actually not difficult at all – all you have to do is pick your favourite granola or muesli ingredients from the Alison’s Pantry bins in the supermarket and away you go! Apart from honey, there’s no sugar in this at all, so it’s loads better for you too.
I made this one up using some delicious honeycomb honey I had, as I love the flavour of the comb as well as the honey mixed through, but feel free to use normal honey if that’s what you have.
Crunch Honey Hazelnut Granola
Makes approx. 12 portions. Ready in 15 minutes.
- 1/2 cup hazelnuts
- 1/2 cup pumpkin seeds
- 1/2 cup sliced natural almonds
- 1 cup honey oats & flakes
- 1/2 cup premium sultanas
- 1 tablespoon honeycomb honey
- 1/2 cup chia seeds
In a dry frying pan, heat hazelnuts, pumpkin seeds and natural almonds until hazelnuts start to split, andpumpkin seeds start to pop. Add honey oats and flakes and cook, stirring constantly, until oats darken and become aromatic.
Add sultanas, then honey, and gently mix to combine, ensuring everything is coated in the honey. Leave to cool.
Add chia seeds, stir through, and leave to cool. Serve for breakfast with milk and/or a tablespoon of yoghurt of your choice.
