This recipe came about after a green-fingered friend of mine gave me the most enormous bag of citrus fruit that she’d picked from the garden. As I was working my way through a bunch of recipe ideas, I realised just how many of them weren’t using the zest of the lemon. What a waste!
So, here you go. Before you start, wash your lemons, and if possible, use organic. You don’t want to be eating spray of any kind!
Simply zest 4 lemons (or as many as you have) with a zester, and toss them in 1/2 cup of raw organic sugar. Spread out on a tray and leave for around 30 minutes for the sugar to set.
That’s it! I use them for toppings on ice cream, cakes, cupcakes and any afternoon tea treats. Well – I do if they don’t all get eaten straight from the tray!
