Dreams do happen! One of my favourite chefs,, Mark Southon, is taking his culinary brilliance to Fiji later this year.
Mark will be hosting Savour Niue 2020, a gastronomic adventure taking place on the stunning Pacific island of Niue from 27th – 30th March 2020. Guests will enjoy delectable dishes prepared by Mark as he mixes local cuisine with his award-winning culinary flair.
You might know Mark from TV3’s The Cafe, or Monteith’s Wild Food Challenge, but the likeable Brit has a serious CV. He trained at Michelin star restaurants across Europe before following a calling to travel. He honed his culinary expertise in the Southern Hemisphere, where he took up positions at top Australian restaurant, Vue de Monde, Auckland institution The French Café and now as head chef at the iconic O’Connell Street Bistro.
Guests attending Savour Niue will enjoy a fun three-day programme including dining experiences that combine Mark’s signature cuisine with Niue’s fresh produce, a tour of food producers and markets, and a cooking masterclass with Mark.
Mark says, “I can’t wait to explore what Niue has to offer. Its fresh local produce, the vanilla farm, honey hives… not to mention the amazing fishing, stunning beaches, coves and secluded spots. Anyone joining me is in for a real treat”.
Local staples such as taro and breadfruit will be given a new, light twist by Mark. “I’ll be blending the essence of my style and approach to cooking with the amazing island produce, which will create unique dishes packed with flavour,” he says. “I like to encourage people to try new things and local specialties such as the Coconut Crab will make an appearance on the menu”.
