Bored of boring chicken? This recipe mixes things up a bit with the addition of delicious Cumin Gouda cheese: what’s not to love?
Cumin Gouda & Apple Stuffed Chicken Breasts
Ready in 35 minutes. Serves 4.
- 4 skinless chicken breasts
- 1 tablespoon olive oil
- 1 cooking apple, sliced
- 100g Food Snob Cumin Gouda Cheese
- 1 tablespoon fresh thyme, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Preheat oven to 190oC, and line a baking dish with parchment or foil.
Heat olive oil in a frying pan, and sear both sides of each chicken breast until golden brown. Remove from heat.
Cut a pocket diagonally into the top edge of each chicken breast, and stuff each breast with apple slices, grated Cumin Gouda and a sprinkle of thyme. Place on baking dish, ensuring the chicken breasts are tilted slightly so the cheese doesn’t run out, and season with salt & pepper and a sprinkle of thyme. Bake for 20 mins until chicken is cooked through
Serve with mashed potato and seasonal greens.
