This is super simple, tastes amazing and is a staple on the keto diet. It’s also a great filler for anyone wanting to cut down on carbs without losing that sensation of feeling something substantial. Feel free to add your own flavours for variety too – I’ll occasionally add a knob of fresh turmeric or ginger into the blender, or add some chopped chilli or a bit of parmesan cheese during cooking.
Ready in 15 minutes. Serves 4-6
- 1 medium size cauliflower
- 2 tablespoons coconut oil
- Generous pinch salt
- Freshly ground black pepper
In a blender, crumb cauli florets until you have a rice-like consistency. Heat coconut oil in a large, heavy-based frying pan and saute on medium heat, taking care it doesn’t catch. Add salt and pepper to taste (I like quite a lot of seasoning in mine), add any spices if required (try anything you like here from the spice drawer) and serve hot.
