Gluten Free Macadamia & Honey Muesli

I’ve recently been trying out breakfasts from the team at Something To Crow About – and I’m loving them. Created by a couple of Kiwis in Whangaparoa, north of Auckland, these cereals manage to tread the line between making their muesli delicious while keeping it healthy. Not an easy task!

Now berries are coming into season, this is a gorgeous recipe to make as a special breakfast in bed for someone, or a lovely way to start the weekend. Pile up seasonal berries, rich coconut yogurt and crunchy mix of fruit and seeds.  Best served with a cup of creamy flat white coffee.

Macadamia & Honey Muesli (Gluten Free)

Serves 2. Ready in 5 minutes.

Ingredients

  •      250g fresh berries (I used raspberry, blueberry and blackberry)
  •      200g plain coconut yoghurt
  •      4 tsp maple syrup
  •      1 cup Something to Crow About Macadamia Otago Honey & Nuts Muesli

Method

In a Mason jar, spoon in a layer of berries, top with a layer of yogurt, drizzle with maple syrup then sprinkle over muesli (granola). Continue layering until your jar is full.

Garnish with fresh mint leaves. Seal the lid and store in the fridge until you are ready to enjoy.
